For me, there’s something very special about this time of year. The air turns crisp, leaves blanket the ground in vibrant shades, and the farmers markets fill with seasonal veggies just waiting to be enjoyed. I love seeing pumpkins, squash, and hearty root vegetables arrive – they’re full of flavours that warm us up from the inside out. Plus, they’re packed with nutrients, making them exactly what our bodies crave as the days grow cooler, darker, and shorter. My thoughts go back to my mum getting out her old stew-pot and making the most delicious casseroles and stews with lots of vegetables and dumplings. We would always dunk Mum’s home-made bread into the stews she made. In those days, we didn’t have slow cookers or microwaves (not that Mum would ever, ever use a microwave!), just the oven where the casserole would be cooking on low most of the day. I remember running down the garden path after school and smelling the casserole before I’d even walked through the kitchen door. As a family, we all sat around the kitchen table to eat, none of this eating with food on your lap in front of the TV or a device. Dad would join us depending upon which shift he was working at the colliery. Happy memories indeed.
At this time of year, it’s especially important to nourish ourselves with comforting, nutritious foods that keep us feeling energised, happy, and ready to fend off those seasonal viruses. That’s exactly why we’ve put together a new recipe – our Seasonal Pumpkin and Rustic Root Veggie Stew. This dish ticks all the boxes: it’s packed with seasonal goodness, it’s easy to prepare, and is so, so satisfying.
Here’s a taste of what makes our stew extra special:
- Pumpkin (or any kind of squash) – this seasonal favourite is loaded with fibre, beta-carotene (an immunity-boosting antioxidant), and a touch of natural sweetness.
- Garlic – more than just a potent flavour enhancer, garlic is known for its antiviral and antibacterial properties, perfect for keeping colds and flu at bay.
- Sage and parsley – these herbs add earthy flavour while delivering anti-inflammatory benefits. Sage is grounding and cosy, while parsley brings a fresh, bright contrast.
