May is a special month for me. It’s my son’s birth month so I’ve always associated May with new life. Years ago, my husband Kevin and I had a narrowboat on the Grand Union Canal, and we used to love taking it out at this time of year. The blossom lining the water, the tiny baby moorhens, coots, swans – they were a delight to watch as we were eating breakfast on the bow of the boat, with that fresh, vibrant green everywhere. Some of the happiest days of our married life were spent on that narrowboat. Spending time on it in May always felt like a reset – and in many ways, that’s exactly what May invites us to do with our health too.
There’s something about this season that inspires us to lighten things up – longer days, brighter mornings, and a natural shift towards fresher, greener foods. So, this month, we’re sharing a recipe that captures the urge to welcome lighter things perfectly: a vibrant pea, white bean and asparagus soup. It’s simple, satisfying, and full of ingredients packed with fibre, plant protein, and prebiotic nutrients to support digestion and gut health.

Spring greens like peas and asparagus aren’t just seasonal favourites – they’re incredibly supportive for your gut. They provide the kind of fibres that help nourish beneficial bacteria, encouraging a more balanced and resilient microbiome. Think of them as gentle daily support for your digestive system, helping everything function that little bit more smoothly.
This soup also offers a wonderful balance of nourishment. The addition of white beans makes it more sustaining, helping to keep you fuller for longer, while also contributing plant-based protein and fibre. Meanwhile, a good-quality broth brings depth of flavour along with valuable compounds that support gut lining health.
This recipe is easy it is to incorporate into your routine – ideal for this time of year when you may not want heavier meals but still need something nourishing.
Adding more green foods into your diet – even in simple ways like this – can have a powerful cumulative effect. Over time, these small choices help support digestion, energy levels, and overall wellbeing.
